Ingredients
- 26 garlic cloves
- ½ a cup ginger (chopped)
- 2 tablespoons olive oil
- 2 tablespoon butter
- 2 ¼ cups onions (sliced)
- 1 ½ teaspoons chopped thyme
- ½ tablespoon cayenne pepper powder
- ½ cup coconut milk
- 3 ½ cups vegetable broth
- 4 lemon wedges
Preparation
First, preheat the oven at 350F. Put the 26 peeled garlic cloves on a baking dish, sprinkling some olive oil and salt over them. Bake the garlic until it’s soft and tender – it should take about 45 minutes. Transfer the cloves to a small glass bowl and leave it to cool down.
In the meantime, melt some butter over low heat in a saucepan, then add the ginger, onions, thyme and cayenne pepper. Cook until the onions are translucent before adding the garlic in. Cook for about 3 minutes more, then add the vegetable broth, cover the saucepan, and cook on low heat. Puree the soup in a blender in the end, then return the mixture to the saucepan and pour the coconut milk in. Add some salt and pepper, squeeze one lemon wedge in and serve hot. You can prepare a bigger amount of this soup and keep it in the fridge – in this way, you can eat it for days.
